Instructions*Brand confectionery coating
In advance, mold 12 stars using melted white candy.
Make 54 cupcakes; cover each with tip 1M rosette in buttercream.
Sprinkle 12 cupcakes with blue sparkles, 19 with red, reserve 23 white.
Position candy stars on blue cupcakes. Arrange cupcakes to form flag.

Uncle Sam and Lady Liberty Cupcakes

Makes: Each cupcake serves 1.
Instructions:
In advance: Prepare fondant pieces. Mix 2 teaspoons Gum-Tex into 24 oz. of fondant. Tint 1 1/4 in. ball skin tone, 1 in. ball red, 3/4 in. ball blue, 1 1/2 in. ball green; reserve remaining white. Roll out 1/8 in. thick. Use pattern to cut crown. For hat use pattern to cut white base. Cut red and blue strips about 1/8 in. wide for stripes; attach with damp brush. Let all pieces dry on cornstarch-dusted surface. Attach lollipop stick to back of hats with thinned fondant adhesive.
Bake and cool cupcakes in silicone cups supported by cookie sheet. Pipe tip 2A head, building up for dimension; round with spatula. For arms, cut lollipop sticks to 3 in. long. Insert 1 1/2 in. deep through tip 21 into bag of icing; squeeze as you pull out stick. For hands, divide skin tone fondant into 4ths. Roll each piece into a ball and flatten slightly. Shape hand and cut slits for fingers. Clean icing off 1/2 in. of iced arm; attach hand. Insert arms in cupcake. Use tip 3 to pipe dot or outline eyes; outline and pipe in mouths. Use tip 7 to pipe dot noses and tip 4 to pipe outline or pull-out hair. Insert flag picks; curl fingers around. Attach crown; insert hat.
Combine Red-Red with Christmas Red for red shown. Combine Lemon Yellow with Golden Yellow for yellow shown. Combine Brown with Red-Red for brown shown.

Our Flag Was Still There! Cupcake

This is one of my favorite cupcakes based on style. The "creative piping" of icing is what creates the fireworks like appearance.

Makes: Each cupcake serves 1.
Techniques Used:Pull-Out Star
Bake cupcakes in Stars & Stripes or Patriotic Themed Standard Baking Cups and cool completely on Cooling Grid.
Prepare Buttercream Icing recipe. Tint 1/3 of icing with Royal Blue Icing Color. Tint another 1/3 icing with Christmas Red Icing Color.
For fireworks, pipe a ring of fringe around rim of cupcake with blue icing and Multi-Opening Decorating Tip 233. Using same tip, pipe a concentric circle with white icing. Finish by piping red icing fringe in the center and inserting a 4th of July Party Pick.

Stars and Stripes Cupcake

Makes: Each cupcake serves 1.
Step 1 Bake cupcakes in Patriotic Themed Standard Baking Cups and cool completely on Cooling Grid.
Step 2 Prepare Buttercream Icing recipe. Tint 1/3 of icing with Royal Blue Icing Color. Tint another 1/3 of icing with Christmas Red Icing Color.
Step 3 For stripes, pipe alternating stripes of red and white icing on half of cupcake using Open Star Decorating Tip 21. Pipe in remaining half with blue icing stripes using Open Star Decorating Tip 21.
Step 4 For stars, roll out Ready-to-Use White Rolled Fondant to a 1/8 inch thickness with Perfect Height Rolling Pin. Use Star Bite-Size Perimeter Cutter to cut out 2 fondant stars for each cupcake.
Step 5 Arrange fondant stars on blue icing on cupcake.

Bursting Into Air Cupcakes

These cupcakes take more time to decorate but they have a special flair that will impress. If you missed the boat in making these for July 4th, there's always the Labor Day Weekend.
Pattern: Fireworks Arcs Tools:
Makes: Each cupcake serves 1.
Step 1 In advance: Make fireworks. Prepare Royal Icing recipe. Tint half Red-Red/Christmas Red combination and half blue. Cover pattern with parchment paper. Using royal icing, pipe Round Decorating Tip 5 fireworks; make 240 red and 240 blue fireworks arcs (20 for each cupcake; number includes extras to allow for breakage); let dry.
Step 2 Bake and cool cupcakes in your favorite Patriotic Themed Baking Cups.
Step 3 Prepare Buttercream Icing recipe. Using white buttercream icing, pipe Large Star Decorating Tip 1M swirls on tops of cupcakes.
Step 4 Insert fireworks arcs and attach icing decorations using white buttercream icing and Round Decorating Tip 5 dots.
Step 5 To assemble, place 10 in. plate and pillars on Cake Base. Place 6 in. plate and pillars on 10 in. plate. Place one pillar on 6 in. plate. Position 1 cupcake on top pillar, 4 cupcakes on 6 in. plate, 8 cupcakes on 10 in. plate and remainder on Cake Base.

Lady Liberty Mini Cake

Wilton is one of my favorite cupcake decorating supply companies. This tutorial is for a mini cake, which is a bit larger than a cupcake. But, what could be more fitting on July 4th than a Lady Liberty Mini Cake. Supplies and instructions by Wilton.com.

Makes: Serves 1.
For head, tint cookie dough copper, roll out and cut with 2 in. round cutter; bake and cool. For torch, tint candy gray (with a small amount of black candy color) and mold ice cream cone from candy mold; refrigerate until firm, unmold. For book, pour melted gray candy into 2 in. round cutter; refrigerate until firm. Pop candy out from cutter and use knife to cut a 1 x 1 1/3 in. rectangle; set aside.
Insert a 3 in. length of wooden dowel rod in wonder mold cake for right arm. Ice cake smooth. Tint fondant light blue, wrap around dowel rod arm. Cut two 6 x 4 in. pieces of blue fondant for robe; gather in accordion shape and attach to body, one piece in front, the other in back. Cut a 5 x 4 in. piece of blue fondant, round off one side, gather as above and attach over robe with damp brush. Roll out a 3 in. long x 1/2 in. diameter piece of fondant for arm holding book; attach book to arm with melted candy. Attach arm to robe with damp brush, wrapping around back. Attach candy torch to other arm with melted candy. Pipe tip 4 dot hands and fingers on both arms. Spatula stripe decorating bag with yellow, red and orange icing and pipe tip 16 pull-out star flames on torch. Pipe tip 2 dot eyes, pupils, nose and string mouth. Pipe tip 4 outline ears. For spikes on hat, tint fondant light blue; cut 6 triangles, 3/4 in. high and let dry on cornstarch-dusted board. Attach hat spikes to back of cookie with melted candy. Pipe tip 4 string hair. Attach lollipop stick to back of cookie with melted candy and insert into top of body.
