2 a.m. Grilled Pineapple Salsa

After a very messy and occasionally bloody rebuild, I finally got the used grill I picked up on Craigslist to work at 2 am last night. Sipping on a local beer, the night was perfect except the only thing grillable in the house was half a pineapple.

Caramelized on the grill, chopped into pieces and mixed with organic salsa–I’ll never serve it any other way.
