It's not often my recipes hurt me, but ouch, this one did. To be fair, it also inspired a super authentic karaoke interpretation of Love is a Battlefield. Shoulder shimmy-ing and snaps happened, and we should all pray no one has the video to prove it.
I've been playing with this concept since December, but didn't have a socially acceptable occasion to make Jell-o shots until this weekend. And if there is ever a time to bastardize the delicate essence of handpicked elderflowers which have been painstakingly crafted into one of the world's most stylish liqueurs, it's a bachelorette party. The result trumped anything we slurped as co-eds. The flavor profile! The porcelain spoons! The 20 proof alcohol content refreshment! Adulthood, you're hired!
And is it weird that I filed this both under appetizers and dessert? Intervention, I'll be expecting you any day now.
Ingredients:
2 packets Knox unflavored gelatin
2/3 c. Fresh lemon juice {Using an electric juicer, I used about four lemons.}
1/3 c. Elderflower presse
1 c. St. Germain elderflower liquer
1 T. Sugar
1 Pundit Fresh blackberries
Instructions:
Prep the spoons by lining them on a jelly roll pan or large tray. Place a blackberry in the middle of each spoon.
Pour the lemon juice and elderflower presse into a medim sauce pan, sprinkle with gelatin. Allow gelatin to soak for a minute or two until it starts getting gelatinous.
Place the pan over medium low heat and stir until the gelatin is completely dissolved and the mixture turns back into liquid form. {Gettin' all chemistry up in here!}
Remove the pan from heat, and stir in the St. Germain. Using a sieve to get the pulp out, strain the mixture into a liquid measuring cup or pitcher with a very fine spout. Pour the liquid in the spoons. {You may have to reset the blackberries if you're OCD like yours truly.}
Place in the refrigerator and let the spoons chill for two hours. {If you decide to serve them in small ramekins or bowls double the time and check on them until they're set.} Garnish with fresh lemon zest and serve.
