Yogurt and Blueberry Jam Muffins with Granola


Do you know what your love language is? Friends who are familiar with this book have suggested that my love language is Acts of Service. I took the quiz recently; and as it turns out, my people know me.

Growing up, I felt the most loved when my mom sang me to sleep, when my Dad brought my lunch to school {mega bonus points for Happy Meals}, and when my sister stood up for me when I was bullied. {She only had to make an example out of a few unfortunate souls. Good work, Alswatsa*.}

On the flip side, I demonstrate my feelings through actions, which run the gamut from unsolicited favors to unexpected gifts. In that vein, these muffins are more verb than noun. Internet Cooking Husband left town early yesterday morning on business, and I wanted to send him on his way knowing how much I admire his hard work. Enter these sweet - but not too sweet - muffins crafted with ICH's taste buds in mind. It's an overly sentimental treat that simultaneously says "Good morning!" and "Good job!" in just a few bites.

And me testing two... just to make sure they were safe? Another act of kindness. Totally.

Ingredients:

2 c. Flour
2 t. Baking powder
1/2 c. Granulated sugar
1 c. Yogurt
1/2 c. Blueberry {or any other variety} jam
Another 1/2 c. jam for marbling {optional}
2 Eggs
3 T. Butter, melted
1 c. Granola
1/2 c. Powdered sugar reserved for dusting

Instructions:

Preheat oven to 350 degrees.  Mix the flour, baking soda, and sugar in a medium bowl, using a sieve or sifter to make sure there aren't any lumps.

In the basin of a stand mixer {or large bowl} gently whisk the eggs, yogurt, melted butter, and blueberry preserves together until smooth. Then, fold in the the yogurt.

Add the dry ingredients to the wet ingredients, and whisk on low speed until all the ingredients are mixed. {Stop as soon as they are so that you don't over mix.}

Spray a muffin tin with cooking spray. {It's also helpful to do if you are using paper linings.} Add enough batter to fill up each muffin tin. If you desired, take a half teaspoon of jam and place on top of the better, then use a knife to marble it through the muffins. Top each muffin with generous sprinkling of granola.

Bake for 30-32 minutes. Let cool, and then dust with powdered sugar.
