Just in time for summer road trips and weekend getaways, dashboard dining is getting a healthy makeover. For this month’s Recipe Redux cooking challenge, nutrition bloggers from across the web were given the following assignment: Have Snacks, Will Travel. Sometimes, the food is the best part of the journey. Do you pack a special treat for the road to eat in the car or at rest stops? Or do you have a tried-and-true snack that makes it safely through airport security? Share your healthy recipes for road-trip nourishment. Here at Meal Makeover Moms’ Kitchen, instead of cooking up something new (we’re into our third heat wave in Boston, so firing up the oven was not an option), we shook things up.
One of our latest kitchen obsessions are Ball Jars. They’re not just for canning. For this grab-as-you-go recipe, we used them as a vehicle for packing and transporting our Tropical Trail Mix.
Trail mix recipes are flexible when it comes to ingredients. We decided to make this particular mixture gluten free by using popcorn, nuts, dried fruit, and semi-sweet chocolate chips (read the label first to make sure your chips are GF).

Packing up the family for a road trip can be stressful at best, which is why we created this easy-to-make snack … brimming with lots of great nutrition. The popcorn provides whole grain goodness and fiber and the dried fruit and nuts add even more goodness. Each jar-full has 400 high-quality calories and good-for-you polyunsaturated fat from the pecans. We can’t imagine anyone turning their nose up to this fun-to-shake, super flavorful snack.
1. Working with four pint-size glass Ball Jars, place 1 cup popcorn, 1/4 cup nuts, 1/4 cup dried fruit, and 1 tablespoon chocolate chips into each jar in any order you prefer. Seal the jar and head for the road. Before devouring, shake the jar and mix up the ingredients.
* If the trail mix snacks will not be consumed the day you pack ‘em, we recommend keeping the popcorn separate in a ziptop bag and adding as needed. This helps keep the popcorn fresh.
