Ginger-Carrot Dressing


Japanese restaurant ginger-carrot dressing is soooo delicious. The trade-off for oversized, wet chunks of iceberg? The opposite of soooo delicious. Hooray for having a food processor {or blender} that makes this recipe super doable at home! {And hooray that I no longer have to eat by myself at the sushi bar when my ginger-carrot dressing craving hits...}

Ingredients:

2 Carrots, peeled and chopped {It should equal a cup.}
1 T. Ginger, peeled, chopped, and densely packed
2 Scallions, chopped
2 T. Rice wine vinegar
4 T. Sesame oil
1 T. Soy sauce
3/4 c. Orange juice
1/4 t. Fish sauce
1/4 t. Honey
Pinch of kosher salt to taste

Instructions:

Put everything into a food processor and run for a few minutes until smooth! Season with salt, if you like. Toss with your favorite greens! Voila très easy!
