Boudin Baked Beans

{arg! curse this terrible lighting and terrible photo! photographer, you're fired.}Boudin baked beans are the love child a trois of Cajun Boudin Blanc, spicy Andouille, and sassy molassy beans. Or, some might say, a total bastardization of three American classics. {Tomayto, tomahto.}

Reserve your foodist judgements - and cast out this terrible photo - until you try it, for this could be one of the best baked bean recipes in internet cooking HISTORY. {Exhibit A: "Awwww HELL yes!" - Internet Cooking Husband.} See?

Happy almost Super Bowl! Gooooo sports!

Ingredients:

19 oz. {Uncooked} Andouille or spicy Italian sausage, removed from it's casing
8. oz. Smoked Andouille sausage, very thinly sliced {Or Cajun Boudin if you can find it.}
1/2 Yellow onion, chopped
4 Cloves garlic, minced
1 Can chopped green chiles {You could also used diced green peppers.}
2 Cans Heinz beans {This is THE super secret ingredient.}
3 T. Molasses 
2 T. Worcestershire sauce
1 T. Dijon mustard
1/4 t. Cayenne
1/2 c. White rice
1/2 c. Beef broth 
Kosher salt
Olive oil 

Instructions:

Preheat oven to 350 degrees. In a skillet on medium high heat, brown and break-up the uncooked sausage. Once it's cooked, set the crumbled sausage on a plate lined with paper towels and discard the remaining fat.

Add a few tablespoons of olive oil into the same skillet over medium high heat. Add the onions, and then the garlic once the onions start to brown. Reduce the heat to medium.

Stir in the green chiles, baked beans, molasses, Worcestershire sauce, Dijon, and cayenne until the ingredients are evenly incorporated. Fold in the crumbled sauce, then stir in the rice and beef broth. {It should need any salt, but taste the liquid and add if necessary at this point.}

Pour the bean mixture into a square casserole dish. Line the top of the beans with the thinly sliced Andouille so that the smoked sausage covers the surface area of the dish.

Bake uncovered for an hour and half - or until the Andouille is almost crisp and the beans have the texture of a casserole. Serve while piping hot! {In case there was any confusion...}
